Charred Spring Onion
Blackened outside, tender inside, finished with sherry vinegar.
Freshness and a bitter, smoky counterpoint to a sweet pepper purée. Char it properly or leave it off the plate.

Ingredients
Serves 10
- Large spring onions10 each to 15 each
- Extra-virgin olive oilto finish
- Sea saltto taste
- Sherry vinegara few drops
Method
Trim the spring onions but keep them whole.
Grill or char aggressively until the outside is blackened and the inside is tender.
Season with sea salt.
Finish with a few drops of sherry vinegar and olive oil.
Chef’s notes
- For a refined plate, use the white and pale green section, with just enough char to give a smoky aroma without making it bitter.
