A note from Paul
Cooking has been my life.
Like most lives spent in hospitality, it has been a rollercoaster. There have been beautiful kitchens, difficult kitchens, extraordinary people, long nights, mistakes, successes, disappointments, friendships, laughter and more lessons than I could ever count.
Through all of it, one thing has never really changed. I love what I do.
I still love walking into a kitchen and wondering what can be made from what is in front of me. I still get excited when a dish finally comes together. I still enjoy learning something new, even after all these years.
And I still believe that knowledge becomes more valuable when it is shared.
For much of my career I have taught young chefs, shared techniques, passed on recipes and tried to explain not only how something is done, but why.
That is really where DUKAI comes from.
It isn't meant to be a locked cupboard of recipes that nobody can open unless they pay for the key.
I want the recipes to be cooked.
I want somebody to learn from them. I want someone standing in their kitchen somewhere to find an idea here that helps them make dinner, understand a technique, rescue an ingredient they were about to throw away, or simply become a little more confident behind a stove.
That is why so much of what I am building here is available freely.
The Recipe Book, the Living Kitchen, the things I have learned over the years, and all the strange little ideas that keep appearing along the way are part of something I would like to keep building for as long as I can.
Of course, building something like this takes time. It takes photographs, writing, testing, ingredients, technology, hosting, experiments and quite a few cups of coffee.
So I have left a small door open.
If something on DUKAI has helped you, taught you something, inspired you, made you hungry, made you smile, or simply kept you company for a little while, and you would like to help me continue building it, you can.
There is absolutely no obligation. There is no expected amount. And nothing suddenly becomes unavailable if you choose not to.
The recipes are still here.
The kitchen is still open.
