The mix

Grate the onions and squeeze most of the moisture out of them in a cloth. This keeps the kofta juicy without making the mixture loose.

What you are cooking with

The meat

  • 4.5 kg Lamb and beef mince, 80 percent lamb to 20 percent beef, or fatty lamb mince alone
  • 60 g to 70 g Salt

The aromatic base

  • 3 each Onions, medium, grated and most of the moisture squeezed out in a cloth
  • 1 large bunch, finely chopped Coriander
  • 1 medium bunch, finely chopped Mint
  • a small bunch, finely chopped Parsley
  • 12 to 15 Garlic, cloves, microplaned to a paste

The spice blend

  • 3 tbsp Cumin
  • 2 tbsp Coriander
  • 1 tbsp Smoked paprika
  • 1 tbsp Sweet paprika
  • 2 tsp Black pepper
  • 1 tsp White pepper
  • 1 tsp Cinnamon
  • 1 tsp Ginger powder
  • 0.5 tsp Turmeric
  • 0.5 tsp Nutmeg
  • a pinch Clove
  • a pinch Cayenne

Depth builders

  • 2 tbsp Tomato paste
  • 1 tbsp Pomegranate molasses, if available
  • of 2 lemons Lemon zest
  • 2 tbsp Preserved lemon, finely minced
  • 2 tbsp Olive oil

Binding

  • 2 each Eggs
  • 120 g Fine breadcrumbs, or fresh bread lightly soaked in milk. Enough for tenderness only
