Compound butter

  • Unsalted butter, softened, not melted400 g
  • Dijon mustard15 g
  • Mild curry powder4 g
  • Anchovy fillets, very finely minced10 g
  • Shallot, very fine brunoise20 g
  • Capers, rinsed, dried and finely chopped15 g
  • Fresh parsley, finely chopped10 g
  • Fresh tarragon, finely chopped5 g
  • Fresh chives, finely sliced5 g
  • Garlic, finely grated3 g
  • Lemon juice10 ml
  • Lemon zest, finely grated2 g
  • Worcestershire sauce10 ml
  • Sweet paprika1 g
  • Cayenne pepper0.5 g
  • Freshly grated nutmeg0.25 g
  • Fine sea saltto taste

Method

  1. Beat the softened butter until smooth and slightly lightened.

  2. Add the Dijon, curry powder, anchovy, shallot, capers, herbs, garlic, lemon juice and zest, Worcestershire, paprika, cayenne and nutmeg. Mix until evenly distributed.

  3. Taste before adding salt because the anchovy, capers and Worcestershire already contribute salinity.

  4. Roll into a 4-5 cm cylinder, wrap tightly and refrigerate for at least 2 hours, preferably overnight.

  5. Slice into 10-15 g discs for service.

Chef’s notes

  • There is no single universally agreed Café de Paris formula. This version is deliberately balanced rather than aggressively spiced.
  • Keep refrigerated and slice cold. For longer storage, freeze the wrapped log and cut portions as needed.
