Citrus Glaze
Citrus juice thickened with cornstarch into glossy dots.
Sweet, sour and bright on the plate, and thick enough to hold a dot.
Made from 100 ml of juice
Ingredients
- Orange or lemon juice100 ml
- Sugar50 g
- Cornstarch, slaked in 1 tbsp cold water1 tsp
Method
Bring the juice and sugar to a simmer.
Stir in the cornstarch slurry and whisk until glossy.
Cool slightly, transfer to a squeeze bottle, and dot as you want it.

Refrigerate at 5°C or below in the squeeze bottle and use within 3 days. A starch-thickened glaze weeps as it sits, so whisk it before service and thin it with a few drops of juice if it has tightened.
