Preserved Lemon Gel
A bright, salty-acidic fluid gel made from preserved lemon rind and fresh lemon juice.
A concentrated preserved-lemon preparation that can be piped in small dots or fine lines.
Approximately 350 g
Ingredients
- Preserved lemon rind100 g
- Water200 g
- Fresh lemon juice50 g
- Sugar10 to 15 g, depending on acidity
- Agar agar2.5 g
Method
Rinse the preserved lemon rind lightly if it is excessively salty.
Blend the rind with the water and lemon juice.
Add the sugar and bring the mixture to a boil.
Whisk in the agar and boil for 1 minute.
Pour into a shallow container and allow it to set.
Blend the set gel until completely smooth, then pass it through a fine sieve.
Transfer to a squeeze bottle and refrigerate.
