Squid-Ink Egg-Yolk Pasta Dough

The black counterpart to the rich yolk dough, coloured and seasoned with squid ink.

The squid ink is dispersed into the yolk before it meets the flour. That gives an even black dough without overworking patches of concentrated ink into an already formed sheet.

  • Italian 00 flour, fine, low-ash pasta flour; weigh accurately37 g
  • Fine semola rimacinata, very finely milled3 g
  • Egg yolk, weighed without white34 g
  • Squid ink, smooth and free of membrane or grit5 g

Method

Kitchen specification

  1. The liquid phase is 34 g yolk plus 5 g squid ink. Whisk until completely homogeneous before it touches the flour.

  2. The finished dough should be a uniform deep black with no grey marbling, no streaks of concentrated ink and no wet tack.

  3. Roll to the same 0.8-1.0 mm thickness and 2-3 mm width as the yellow dough so both colours cook at exactly the same rate.

Mixing and kneading

  1. Whisk the 5 g squid ink into the 34 g egg yolk until the mixture is completely even and glossy.

  2. Combine the 37 g 00 flour and 3 g semola thoroughly.

  3. Make a well and add the black yolk mixture.

  4. Draw the flour inward gradually and bring the mixture together into a firm dough.

  5. Knead for 8-10 minutes until smooth, elastic and uniformly black. Scrape the bench clean rather than compensating with extra flour.

Resting

  1. Wrap tightly with no exposed surface.

  2. Refrigerate for 60 minutes.

  3. Temper for 15-20 minutes before rolling, so the dough bends cleanly without cracking at the edges.

Lamination and cutting

  1. Flatten the dough enough to enter the widest pasta-machine setting.

  2. Pass, fold into thirds and repeat twice at the widest setting to establish a uniform sheet.

  3. Reduce the setting one step at a time until the sheet reaches 0.8-1.0 mm.

  4. Trim only ragged edges. For the lobster dish, weigh 35 g of the rolled dough for the black portion before cutting.

  5. Cut 2-3 mm wide into tagliolini. Dust minimally so the surface remains black rather than grey with flour.

Chef’s notes

  • The squid ink is there for more than colour: it should give a restrained marine note, not dominate the lobster.
  • Matching the thickness of the two doughs matters more than matching their visual length. If one is thicker, the bicolour pasta can never be cooked perfectly together.

Make ahead

The wrapped dough can be made earlier the same day and kept refrigerated. Roll and cut it close to service for the cleanest black finish.
