Agar Agar Bisque Gel
Shellfish bisque set with agar, coloured with a restrained amount of spirulina and blended as needed.
A savoury marine gel that can be cut cleanly or blended into a smooth plating gel.
500 ml base
Ingredients
- Prawn or shellfish bisque, well strained, with no separate fat layer500 ml
- Agar agar3.5 to 4 g
- Spirulina powder0.5 to 1 g
- Fresh lemon juice or white grape vinegar, optional5 ml
- Fine sea salta pinch if needed
Method
Whisk the agar into the cold bisque until completely dispersed.
Bring to a full rolling boil and boil for 60 to 90 seconds while whisking.
Remove from the heat.
Mix the spirulina with a tablespoon of the warm bisque first, then whisk it back into the pan and blend briefly.
Pour into a shallow tray and chill for 20 to 30 minutes until fully set.
For a fluid gel, blend the set gel until smooth. Loosen with a little hot bisque if needed.
Chef’s notes
- Start with the smaller amount of spirulina; colour intensifies quickly.
