Lemon Gel
A clean fresh-lemon fluid gel set with agar and blended until silky.
A sharp, bright component for fish, seafood, vegetables and richer plates.

Ingredients
- Fresh lemon juice, strained250 ml
- Water100 ml
- Sugar60 to 80 g, adjusted to the lemons
- Agar agar2 g
- Fine sea salta pinch
- Lemon zest, very finely gratedoptional
Method
Combine the water, sugar, agar and salt in a saucepan.
Bring to a full boil while whisking and boil for 30 to 60 seconds to hydrate the agar.
Remove from the heat and cool slightly to about 80°C.
Stir in the fresh lemon juice and the optional zest.
Pour into a shallow tray and leave to set, about 10 to 15 minutes.
Cut the set gel into pieces, blend until completely smooth and pass through a fine sieve.
Chef’s notes
- Adding the lemon juice after the agar has boiled keeps the flavour brighter.
